Designations of origin can be registered for agricultural products and foodstuffs of special quality to enable their identification in commerce. If the preparation, the processing and the production of a product take place in a certain region, a protected designation of origin (PDO) can be registered for the product. If only one of these steps takes place in this region, a protected geographical indication (PGI) can be assigned.
The EU Regulation 1151/2012 also allows the registration of names as Traditional Specialties Guaranteed (TSG) which designate not the geographic origin, but a traditional composition or a traditional manufacturing process of a certain food product.
